Rita’s Story: From Boss’ Pizza & Chicken to Rita’s Pizza & Chicken Fusion Rita’s story began with a simple dream: to build a family-owned, casual restaurant. With no previous restaurant experience, we took a leap of faith in 2019 and purchased an existing restaurant, Boss’ Pizza and Chicken in Lincoln, Nebraska. We continued operating through one of the most difficult periods any restaurant could face, the COVID-19 pandemic. My husband comes from a software and technology background. Instead of relying entirely on outside systems, he built our own website for online ordering and developed our own POS system. That journey reflects who we are: a 100% locally built and locally owned Nebraska family business, built through hard work, technology, and a willingness to learn. After COVID, we wanted to bring more of our family’s food traditions into the restaurant. We introduced our family-style momo recipes and began creating fusion dishes such as Chilli Momo, Tofu Chilli, Tandoori Pizza, and Paneer Pizza, while continuing to serve the pizza and chicken favorites our customers already loved. As our menu and concept evolved, we changed our name from Boss’ Pizza and Chicken to Rita’s Pizza and Chicken Fusion. We soon learned an important business lesson: changing a restaurant name is much more than changing a sign. Many longtime customers continued searching for Boss’ Pizza, and we lost some of the recognition and customer traffic we had built over the years. Since then, we have worked hard to rebuild that connection and introduce customers to the new Rita’s identity. Today, our menu brings together pizza, chicken, Indian cuisine, momo, pasta, fried rice, and other fusion dishes, including more than 40 speciality pizzas. We are also proud of our broasted chicken, spicy chicken options, and wings available in 30+ flavors. As a local, family-owned restaurant in Lincoln, our goal is simple: to provide delicious food, friendly service, and a comfortable place for our community. Whether you order online for delivery, pick up your favorite meal, or dine with us, we want every experience to feel personal and welcoming. Our late-night service is also an important part of what we offer, with delivery available late into the night, including up to 4 AM on weekends and 3 AM on weekdays. Rita’s is more than a new restaurant name. It represents our family, our food traditions, our technology, and everything we have learned along the way. We want longtime customers to enjoy the pizza and chicken they remember while a new generation discovers our family recipes and fusion food. Rita’s is still a work in progress, but it is our family’s story, built locally in Lincoln, Nebraska, one customer and one meal at a time.
